EASY LAMB CHOP BAKE

This is one of my favourite recipes for a mid-week meal. It takes very little effort and time to prepare, but most of all is delicious 100% of the time - all the time. You can change up the veg to keep it interesting!
Preparation time: 15 minutes
Serves Two
Preheat Oven to 220 ̊c
Ingredients:
4 lamb chops
1/4 head broccoli cut into florets
1/2 an onion sliced into wedges
50g roughly chopped mushrooms of your choice (keep these nice and chunky)
1tsp dried chilli flakes
1tsp (heaped) chopped garlic
1tsp garlic and herb spice
5 slices of lemon
3 Tbsp olive oil
Salt and pepper to taste
Method:
Throw all your veg into a bowl, dress with the olive oil and mix in chilli, garlic, garlic and herb spice, salt and pepper.
Lay your veg into an oven proof dish and pop into the oven to par cook while you prepare your chops.

Lay your chops flat, make sure they are clean and aren't covered in bone shavings. (When shopping for good quality meat, look at the colour and texture. It should be bright red and smooth. Also look at the fat, it should be an even line right the way through - you do not want the fat rind to be uneven (being fatter and thinner in certain places) this is a sign of inferior meat quality.
Season your chops with salt and pepper, I like to add a bit of barbeque spice or steak and chop seasoning.

Remove your veg from the oven and lay chops ontop of the veg. Wedge your slices of lemon between the chops. Place in the oven for 10 minutes. After 10 minutes take the chops out and put the grill on. Position the chops so that the fatty rind faces upward and grill for a furthur 6 to 10 minutes or until the fat is crispy.

You can eat as is or with cous cous, polenta, potato - any starch of your choice really. Its always nice to change up the starch and veg so that it becomes a totally new dish everytime!
